So last week, I decided to try out a Monday Glow. I heard about this from Annie (a fellow blogger I met thanks to the Style Collective community). She and her sister Cat created this beautiful eBook called Monday Glow: Recipes to help you feel amazing all year long. It's filled with beautiful photos and easy recipes to help you get your glow on.
What is a Monday Glow?
This is a one-day eating plan, to be repeated every Monday. This is meant to start your week of on a good note and help you glow from the inside out. This will help set the tone and make it easier to pick up these healthy habits for the remainder of the week. This eBook taught me about what to eat and why these foods make you glow.
My Review and Thoughts
My initial thought after reading about the Monday Glow plan, was that I can totally do this! I like to think that I eat pretty healthy, but for being a foodie, my weekends tend to get pretty indulgent. I've never wanted to commit to doing a meal plan because I enjoy food way too much, but knowing this was a 1 day plan with yummy things I already eat, it was totally doable!

The recipes are simple and easy to follow. The prep was quick and I was able to finish within 45 minutes or so. I really did not want to spend my day meal prepping for hours. I loved that along with the recipes, there were nutritional facts for each meal and more information on how each ingredient help contribute to your glow. I really enjoyed all the recipes, but my favorite had to be the Get up and Glow Eggs (shown below). It was a great way to get my veggies in, and I even shared it with my boyfriend. He liked it so much, he even started making it for himself. He meal-preps all his meals for the week on the regular, and he usually has protein pancakes and egg whites for breakfast. He was looking for a way to incorporate some veggies into his breakfast and with this egg dish, it was the perfect solution.
